Gastronomy is one of the most important things of Tuscany. The meat of the Chianina is on the menu of many restaurants. Nevertheless consumers of Chianina must pay attention if they really get the right meat on their dish. Restaurant holders dare to serve a steak from a less exclusive race.
Because of the exclusivity and quality of the Chianina meat a lot of restaurant holders want it absolutely on their menu. Because tourists, and even habitants of Toscany, love the tenderness and the fine taste of the meat.

The meat is so expensive that it is hard to make profits out of it. Hence that there are sometimes impostors.
Wrong meat
This way a butcher from Umbrië sold meat from another race under the name ‘Chianina’, so he made profit. One costumer saw it, accused him by the CCBI (see further) with as consequence that he had to close his shop right a way.
Control
Happily there exist control systems, such as the CCBI, which keep an eye on such practices. They established a list of all restaurants and butcher’s shops where they serve for certain Chianina meat. As consument you can consult these list on the internet on the website of the CCBI. |
