Meat stew with aromatics

The most famous dish with the Chianina is without doubt the Bistecca Fiorentina. But there are also a lot of other recipes who are worth trying. One of them is Stracotto agli aromi.

Ingredients for 6 persons

1,2 kilogram Girello di spalla
olive oil of the type extra vergine
1 carrot
1 onion
1 celery stalk

 


10 grams of dried mushrooms (washed, soaked and wrung out)
1 laurel leave
1 glass of white wine
pepper and salt
stock

How to prepare

Bind the meat together and let it roast in hot olive oil. Pour off the oil and add new oil, the chopped vegetables, the mushrooms and the laurel leave.


Raise the flame as soon as the vegetables are cooked, and add the white wine so it can fume. Let it cook for approximately two hours and a half and add some hot stock now and then. Pour off the cooking liquid and put the meat on a warm tray.

 


Stracotto agli aromi

Mix the cooking liquid with the vegetables so you get a sauce that isn't too watery.

Cut the meat, sprinkle it with the sauce and serve it.
